Located in the pedway, in the basement of Chicago’s Block Thirty Seven,
is Gayle’s Best Ever Grilled Cheese, with grilled cheese that tastes like it came down from heaven

What started off as a farmers market booth at the Green Street Market selling cheese,
Gayle, from a small town in Illinois, was given an opportunity that she had to seize
and with that she started her own restaurant where she was able to bring her expertise,
about local farmers and other fresh stores, with fresh ingredients that she brought to Gayle’s Best Ever Grilled Cheese

With a list of creative grilled cheese sandwiches, they are constantly modifying,
to bring Chicago a taste that comes from a local background, and it’s worth buying and trying
The Duke, filled with Prairie Pure Swiss cheese and ham with your choice of mustard on top,
Like the Poblano Mustard, from Chicago’s very own Coop Sauce, makes one bite in hard to stop
Or the Southport, a Good Food Award Winner, comes with their classic Prairie Pure Butterkase cheese and smoked onion marmalade,
and Southport Grocery and Cafe is where the fresh marmalade is made
If you’re never had Butterkase, it is a soft, mild, and buttery German cheese,
when melted with the locally baked sourdough panini bread, it it sure to knock you to your knees,
maybe have you holler a celebratory, “Oh, Jeez!”
Then there are the Lobster Fridays! Which have gotten lots of praise
With fresh lobster and Butterkase cheese, for the lobster lover it is sure to amaze!

With a passion for her business, Gayle has a pride to her shop that glows
And most of all, her devotion to the Green City Market shows
Her booth still makes appearances at the market and other events,
to bring local restaurants and farmers together, is what she aims to represent
